Double Fruit Cake
Recipe

Makes 2 cakes
(keep one and give one away)

3 cups self rising flour

2 cups sugar

3 teaspoons cinnamon

4 eggs (beaten)

2 cups pumpkin

1 cup melted shortening

2 lbs fruitcake mix

1/2 lb chopped dates

1/2 lb black walnuts

1/2 lb English walnuts

1/2 lb pecans

1 lb raisins

Put dry ingredients into mixing bowl and stir well.  Form a well in center of dry ingredients; add eggs, pumpkin, and shortening.  Stir until moistened.  Then:

Add fruitcake mix, fruit and nuts.  Mix well, pour in two bunt pans.  Bake at 350 degrees for approximately 45 minutes or until done.  After cooling, remove from pan and keep covered.  Baste with Karo syrup and your favorite rum four times a day for 5 days.
